Laghman (Hand-Pulled Noodles)
A popular Uighur-influenced dish of long, hand-pulled noodles served with a spicy stir-fry of meat and vegetables.

Ingredients
- Hand-pulled noodles (flour, water, salt, oil), 500g Lamb or Beef, 2 Bell peppers, 1 Radish, 2 Tomatoes, 2 Onions, Garlic, Cumin, Soy sauce, fresh Herbs.
Instructions
- 1. Pull the noodles thin by hand and boil in salted water. 2. Sauté meat strips in a wok until browned. 3. Add sliced onions, peppers, radish, and tomatoes. 4. Season with garlic, cumin, and soy sauce. Add a little broth to create a sauce. 5. Combine noodles and sauce or serve the sauce over the noodles. Garnish with herbs.
