Laghman (Hand-Pulled Noodles)
Hand-stretched wheat noodles served in a vibrant stew of meat, peppers, tomatoes, and Silk Road aromatics.

Ingredients
- Noodles: 500g flour, water, salt Stew: 300g beef or lamb, 2 bell peppers, 2 tomatoes, 1 radish (daikon), 4 cloves garlic, 1 tbsp tomato paste, cumin, star anise
Instructions
- Prepare an elastic dough and stretch by hand into long, thin noodles (or use high-quality linguine as a shortcut). Boil noodles and set aside. Sauté meat strips with onions and garlic. Add chopped peppers, tomatoes, radish, and spices. Simmer with broth until veggies are tender. Serve noodles in deep bowls, topped with the stew and fresh cilantro.
