  1. Mix flours, yeast, and water into a thin, pourable batter.
  2. Let ferment for several hours or overnight until bubbly and slightly sour.
  3. Heat a non-stick pan. Pour a thin layer of batter and spread into a circle.
  4. Cook only on one side until the top is full of small holes and dry.
  5. Remove and stack with the bubbly side up.
