Lahoh (Yemeni Crepes)
Soft, spongy, and slightly sour flatbreads with a distinctive bubbly surface, made from a fermented batter of corn and wheat flour.

Ingredients
- 1 cup corn flour
- 1 cup wheat flour
- 1/2 tsp yeast
- Warm water
- Pinch of salt
Instructions
- Mix flours, yeast, and water into a thin, pourable batter.
- Let ferment for several hours or overnight until bubbly and slightly sour.
- Heat a non-stick pan. Pour a thin layer of batter and spread into a circle.
- Cook only on one side until the top is full of small holes and dry.
- Remove and stack with the bubbly side up.
