Lavashak (Fruit Leather)

Thin, chewy sheets of concentrated fruit puree, traditionally made from sour cherries or barberries, dried in the sun and rolled up for snacking.

Ingredients

Instructions

  1. Wash and pit the cherries if using.
  2. Cook fruit with a little water until very soft.
  3. Blend until smooth and strain if desired.
  4. Add sugar and cook on low heat until thickened (about 30 minutes).
  5. Add lemon juice and salt.
  6. Spread thin on parchment-lined trays.
  7. Dry in the sun or low oven until leathery.
  8. Roll into logs and slice to serve.
