Leche Frita
Fried milk — thick, creamy custard squares coated in breadcrumbs and deep-fried until golden. Spain's most paradoxical dessert.

Ingredients
- 500ml whole milk
- 100g sugar
- 80g flour
- 2 egg yolks
- 1 cinnamon stick
- Lemon zest
- For coating: 2 eggs beaten, breadcrumbs
- Oil for frying
- Cinnamon sugar to serve
Instructions
- Whisk flour and sugar. Add yolks.
- Heat milk with cinnamon and lemon until steaming. Pour into flour mixture.
- Cook over medium heat, stirring constantly, until very thick.
- Pour into an oiled square tin to 2cm depth. Chill until firm.
- Cut into squares. Coat in beaten egg, then breadcrumbs.
- Fry in hot oil until golden. Drain and roll in cinnamon sugar.
