Lechon Kawali
Crispy, deep-fried pork belly that is boiled with spices until tender before being fried to a golden crunch.

Ingredients
- 1kg pork belly (whole slab) 1 tbsp whole black peppercorns 3 bay leaves 4 cloves garlic, smashed Salt to taste Oil for deep frying Liver sauce (Mang Tomas) for dipping
Instructions
- 1. Place the pork slab in a large pot. Add water, peppercorns, bay leaves, garlic, and salt. 2. Bring to a boil, then simmer for 45-60 minutes until the meat is tender but not falling apart. 3. Remove the pork and let it cool completely. Dry the skin thoroughly with paper towels (very important for crispiness). 4. Deep fry the whole slab in hot oil until the skin is blistered and golden brown. 5. Chop into bite-sized pieces and serve with liver sauce and a side of rice.
