Lion's Head Meatballs

Large, tender pork meatballs braised with cabbage, resembling a lion's mane.

Ingredients

• Ground pork (hand-chopped preferred)
• Napa cabbage
• Ginger, scallions, water chestnuts
• Light stock

Instructions

1. Form large meatballs. Sear or blanch.
2. Line a pot with cabbage leaves, place meatballs on top, and cover with more cabbage.
3. Slowly braise in clear stock until the meat is incredibly soft.
