Llapingachos

Cheesy potato patties flavored with achiote, traditionally served with a peanut sauce.

  1. Mash the boiled potatoes while still warm. Mix in the achiote oil and salt. Take small portions of the mash, place a spoonful of cheese in the center, and form into round patties. Let them chill for 30 minutes to firm up. Fry the patties on a griddle or in a pan with a little oil until golden brown on both sides. Serve with peanut sauce, a fried egg, and avocado slices.
