Llapingachos
Cheesy potato patties flavored with achiote, traditionally served with a peanut sauce.

Ingredients
- 1kg starchy potatoes, peeled and boiled 1 cup shredded white cheese (queso fresco) 2 tbsp achiote oil (annatto) 1/2 tsp salt Peanut sauce (salsa de manĂ) for serving Fried egg and avocado for garnish
Instructions
- Mash the boiled potatoes while still warm. Mix in the achiote oil and salt. Take small portions of the mash, place a spoonful of cheese in the center, and form into round patties. Let them chill for 30 minutes to firm up. Fry the patties on a griddle or in a pan with a little oil until golden brown on both sides. Serve with peanut sauce, a fried egg, and avocado slices.
