Malawah
A delicious flaky, multi-layered Yemeni flatbread, brushed with ghee and fried on a griddle or baked in a tanoor.

Ingredients
- 3 cups flour
- 1 cup warm water
- 1/2 cup clarified butter (samn) or oil
- 1 tsp salt
- Black cumin seeds (nigella)
Instructions
- Make a soft dough and let it rest.
- Roll out dough very thin, brush with samn, and fold multiple times to create layers.
- Roll into a spiral, then flatten into a circle.
- Fry on a hot dry griddle until golden and crispy on both sides.
- Serve hot with eggs, beans, or honey.
