Manakish Za'atar
The "pizza of the Middle East": flatbread topped with a mixture of aromatic za'atar (thyme blend) and olive oil.

Ingredients
- Flatbread dough (flour, yeast, water, salt), 1/2 cup za'atar (thyme, sumac, sesame seeds), 1/2 cup extra virgin olive oil.
Instructions
- Preheat oven to 250°C (or as hot as it goes). Roll out dough into small circles. Mix the za'atar and olive oil into a paste. Spread a generous layer of the mixture over the dough. Bake for 8-10 minutes until the edges are golden and crispy. Serve hot, either open-faced or folded.
