Mandazi (Swahili Doughnuts)
Triangle-shaped fried dough, lightly sweetened with coconut milk and cardamom — the classic East African snack.

Ingredients
- 3 cups wheat flour
- 1 tbsp yeast or 2 tsp baking powder
- 3 tbsp sugar
- 1/2 cup coconut milk
- 1 egg
- 1/2 tsp cardamom
- Oil for frying
Instructions
- Mix flour, sugar, cardamom, and yeast.
- Add beaten egg and coconut milk. Knead to a soft dough.
- Let rise 45 minutes.
- Roll out and cut into triangles or squares.
- Deep fry until puffed and golden. Drain on paper.
