Mandio Chyryry

A quick scramble of boiled cassava chunks, onions, eggs, and plenty of cheese. The name means "fried cassava" in Guaraní.

  1. 1. Cut boiled cassava into bite-sized cubes. 2. Sauté chopped onion in a pan. 3. Add cassava cubes and fry until slightly golden. 4. Whisk eggs and pour over the cassava. 5. Stir in crumbled cheese. 6. Cook until the eggs are scrambled and cheese is melted.
