Marissa (Sorghum Beer)
A traditional fermented sorghum beer, slightly sour and mildly alcoholic, brewed by women in rural Sudan.

Ingredients
- 2 cups sorghum grain
- 5 cups water
- Malt (sprouted sorghum)
- Fermentation starter
Instructions
- Germinate sorghum by soaking and letting it sprout for 2-3 days.
- Dry and grind into malt powder.
- Mix malt with water, add starter and let ferment for 2-3 days.
- Strain and serve chilled in gourds.
