Masa (Waina)

Fermented rice cakes from Northern Nigeria, crispy on the outside and soft on the inside, traditionally cooked in a special multi-well pan.

Instructions

  1. Soak the raw rice overnight. Blend with cooked rice, yeast, and a little water into a smooth batter.
  2. Allow the batter to ferment in a warm place for 2-4 hours until doubled in size.
  3. Stir in sugar and salt.
  4. Heat a masa pan, grease the wells with oil, and pour in the batter.
  5. Fry until golden brown on one side, then flip and fry the other side.
