Mbejú
Paraguayan manioc starch flatbread — a thin, crispy, naturally gluten-free pancake with cheese, cooked on a dry griddle.

Ingredients
- 300g almidón de mandioca (manioc starch)
- 100g queso Paraguay, crumbled
- 2 tbsp butter or lard
- 1 egg
- Salt
Instructions
- Mix manioc starch with crumbled cheese, butter, egg, and salt.
- The texture should be crumbly — not a smooth dough.
- Press a handful into a thin round directly on a dry, hot griddle.
- Cook 4-5 minutes per side until golden and crispy.
- The mbejú will crisp as it cools.
