Mbejú

A starch-based pancake that is a staple of the Guaraní-Jesuit heritage. It is crispy on the outside and soft, cheesy on the inside.

  1. 1. Mix starch, salt, and crumbled cheese in a bowl. 2. Rub in the butter with your fingers until the mixture looks like coarse sand (arenado). 3. Add milk drop by drop to moisten, but do not form a solid dough. 4. Heat a dry frying pan. Spread a layer of the mixture (about 1.5cm thick) without pressing. 5. Cook until the bottom is golden, then flip and cook the other side.
