Mchuzi wa Samaki (Coconut Fish Curry)
A fragrant coconut milk curry with tilapia or snapper — the signature dish of the Kenyan Swahili coast.

Ingredients
- 4 fish fillets (tilapia or snapper)
- 1 cup coconut milk
- 2 tomatoes, diced
- 1 onion, sliced
- 2 cloves garlic
- 1 tsp turmeric
- 1 tsp ground coriander
- 2 tbsp oil
Instructions
- Sauté onion and garlic in oil.
- Add tomatoes, turmeric, and coriander. Cook to a sauce.
- Pour in coconut milk and bring to a gentle simmer.
- Slide in fish fillets and cook 10-12 minutes until flaky.
- Serve with coconut rice.
