Medus Kūka (Latvian Honey Cake)
A stunning multi-layered cake with honey-infused biscuits and a tangy sour cream frosting.

Ingredients
- For the layers: 3 cups flour, 1 cup sugar, 3 tbsp honey, 100g butter, 2 eggs, 1 tsp baking soda. For the frosting: 800g sour cream, 1 cup powdered sugar, 1 tbsp lemon juice.
Instructions
- 1. Melt butter, sugar, and honey in a water bath. Stir in baking soda, then eggs. 2. Gradually add flour to form a dough. Divide into 8-10 pieces. 3. Roll each piece into a thin circle and bake at 180°C for 4-5 minutes until golden. 4. Trim the edges while warm (save the scraps!). 5. Whisk sour cream with powdered sugar and lemon juice. 6. Assemble the cake by spreading frosting between each layer. 7. Frost the top and sides, then cover with crushed biscuit scraps. 8. Chill for at least 12 hours before serving to allow the layers to soften.
