Mesopotamian Lamb Stew with Beets

Ingredients
- lamb diced, sheep fat, salt, beer, water, onion chopped, arugula chopped, leeks or ramps, coriander chopped, cumin, beets diced
Instructions
- Heat fat in a heavy pot. Brown the lamb pieces. Add salt, beer, and water to cover. Stir in onion, arugula, leeks, coriander, and cumin. Simmer over low heat until the meat is tender. Add the diced beets towards the end and cook until soft and the sauce has a rich red color.
