Migas Extremeñas
Extremadura's famous fried bread crumbs with chorizo, bacon, and peppers — a shepherd's breakfast turned national obsession.

Ingredients
- 400g day-old bread, torn into small pieces
- 100g chorizo, sliced
- 100g panceta (bacon), diced
- 4 cloves garlic, sliced
- 1 dried red pepper (ñora)
- 100ml olive oil
- Salt
- Water to moisten
Instructions
- Sprinkle bread with salted water, toss, cover and rest 1 hour to hydrate.
- Fry garlic and dried pepper in oil until fragrant. Remove.
- Fry chorizo and panceta until crispy. Set aside.
- Add moistened bread to the pan. Fry and stir continuously for 15-20 minutes until golden and slightly crispy.
- Return meats and garlic. Toss and serve hot.
