Misir Wat (Spicy Red Lentils)
A rich and spicy red lentil stew, one of the most popular vegetarian dishes in Ethiopia.

Ingredients
- 1 cup red lentils, rinsed
- 2 large onions, finely minced
- 2 tbsp berbere spice
- 1/4 cup vegetable oil
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- Salt to taste
Instructions
- Slow-cook minced onions in a dry pot until they soften and turn slightly brown.
- Add oil and berbere, cook for 5-10 minutes (add a splash of water if needed).
- Stir in garlic, ginger, and lentils.
- Add 3 cups of water and simmer until lentils are soft and the stew is thick.
