Molokhia (Egyptian Jute Leaf Soup)

A silky, nutrient-rich green soup made from finely minced jute leaves, flavored with a potent garlic and coriander tempering (tasha).

Instructions

  1. Bring the broth to a gentle boil. Whisk in the minced molokhia until smooth.
  2. Do not let it boil vigorously or cover the pot, as the leaves may separate from the broth.
  3. In a small pan, heat ghee and sauté garlic and coriander until golden and fragrant (this is the tasha).
  4. Quickly pour the tasha into the bubbling molokhia (traditionally with a "gasp" of surprise!).
  5. Serve immediately with white rice and roasted chicken.
