Mote con Huesillo
The quintessential Chilean summer refreshment: sweet dried peach nectar served with husked wheat (mote).

Ingredients
- 12 dried peaches (huesillos), 2 cups husked wheat (mote), 1 cup sugar or molasses (chancaca), cinnamon stick, orange peel
Instructions
- 1. Soak peaches overnight. 2. Boil the peaches in their soaking water with sugar/chancaca, cinnamon, and orange peel until tender and the liquid is dark and syrupy. 3. Cook the wheat separately in boiling water until soft. 4. Serve ice-cold in a tall glass: place two peaches, two spoonfuls of wheat, and fill with the sweet syrup.
