Mousse au Chocolat

An airy, intensely chocolatey mousse made only from chocolate and eggs — no cream, the pure French way.

Instructions

  1. Melt chocolate gently over a bain-marie. Cool slightly.
  2. Whisk yolks into chocolate one at a time.
  3. Whip whites with a pinch of salt to stiff peaks.
  4. Add sugar and whip briefly to glossy peaks.
  5. Fold a third of the whites into chocolate to lighten.
  6. Gently fold in remaining whites in two batches.
  7. Divide into glasses and chill at least 2 hours.
