Mousse au Chocolat
An airy, intensely chocolatey mousse made only from chocolate and eggs — no cream, the pure French way.

Ingredients
- 200g dark chocolate (70%), broken
- 6 eggs, separated
- 30g sugar
- Pinch of salt
Instructions
- Melt chocolate gently over a bain-marie. Cool slightly.
- Whisk yolks into chocolate one at a time.
- Whip whites with a pinch of salt to stiff peaks.
- Add sugar and whip briefly to glossy peaks.
- Fold a third of the whites into chocolate to lighten.
- Gently fold in remaining whites in two batches.
- Divide into glasses and chill at least 2 hours.
