Mtsvadi (Georgian Shashlik)
Succulent chunks of pork or lamb grilled over grapevine embers, traditionally served with onions and pomegranate seeds.

Ingredients
- 1 kg pork shoulder or lamb
- 2 large onions, sliced
- Salt and black pepper
- Lavash bread
- Pomegranate seeds
- Tkemali sauce (plum sauce)
Instructions
- 1. Cut the meat into large cubes. 2. Mix with sliced onions, salt, and lots of black pepper. Let marinate for at least 2 hours. 3. Skewer the meat. 4. Grill over hot coals (ideally from dried grapevines) until browned and tender. 5. To serve, slide the meat off the skewers using a piece of lavash bread. 6. Garnish with raw onions and pomegranate seeds.
