Muhsab (Wheat and Meat Porridge)
A traditional hearty porridge made from cracked wheat and shredded meat, slow-cooked until integrated into a thick, savory consistency.

Ingredients
- 2 cups cracked wheat (harees)
- 500g lamb or beef, bone-in
- Salt and black pepper
- Clarified butter (samn) for topping
Instructions
- Soak wheat overnight.
- Cook meat and wheat in a large pot with plenty of water for 2-3 hours.
- Once the meat is very soft, remove the bones.
- Vigorously beat or mash the mixture until it becomes a thick, integrated porridge.
- Serve in a shallow dish, topped with melted samn.
