Mujaddara (Lentil and Rice)
A comforting, ancient vegetarian staple of lentils and rice (or bulgur), topped with a mountain of deeply caramelized, crispy onions.
Cuisine: Lebanon
Ingredients
- 1 cup brown lentils, 1 cup long-grain rice, 3 large onions (sliced into rings), 1/2 cup olive oil, cumin and salt.
Instructions
- Boil the lentils until half-cooked. Add the rice and cumin, and cook together until the water is absorbed and grains are tender. Meanwhile, fry the onion rings in olive oil until dark brown and very crispy. Serve the lentil-rice mixture topped with the caramelized onions. Usually accompanied by a yogurt and cucumber salad.
