Syrian Mujadara
A comforting, ancient vegetarian staple of lentils and bulgur (or rice), topped with a mountain of deeply caramelized, crispy onions.

Ingredients
- 1 cup brown lentils
- 1 cup coarse bulgur (Syrian preference) or rice
- 4 large onions, thinly sliced
- 1/2 cup olive oil
- Cumin and salt
Instructions
- Boil lentils until halfway cooked.
- Add bulgur and spices. Cook until water is absorbed and grains are tender.
- Meanwhile, fry onions in plenty of olive oil until they are dark brown and crispy (not burnt).
- Pour half the onion oil into the lentil mix. Serve topped with the crispy onions.
- Serve with a side of yogurt or a simple tomato-cucumber salad.
