Mulgikapsad (Sauerkraut with Pork and Barley)

A slow-cooked, rich stew of sauerkraut, pork, and barley groats; the ultimate Estonian winter fuel.

  1. 1. In a heavy-bottomed pot, layer the ingredients: sauerkraut on the bottom, then pork cubes, then barley groats. 2. Add enough water to just cover the ingredients. 3. Add sugar and a little salt (the sauerkraut is already salty). 4. Cover and simmer on very low heat for at least 2 hours (or bake in the oven). 5. Do not stir until the very end when the barley is soft and the meat is tender. 6. Mix everything together and serve with boiled potatoes.
