Nasi Goreng (Indonesian Fried Rice)

Indonesia's national dish — smoky, sweet, and savory fried rice seasoned with kecap manis (sweet soy sauce), shrimp paste, and chili, topped with a fried egg, crispy shallots, and prawn crackers.

Instructions

  1. Sauté shallots, garlic, and chili paste in oil over very high heat.
  2. Add chicken or prawns and cook until done.
  3. Add toasted shrimp paste and stir 30 seconds.
  4. Add rice and toss vigorously. Pour kecap manis over and stir-fry until rice is well-coated and slightly charred.
  5. Fry eggs sunny-side up. Serve rice topped with a fried egg, crispy shallots, krupuk, cucumber, and tomato.
