Nasi Goreng (Indonesian Fried Rice)
Indonesia's national dish — smoky, sweet, and savory fried rice seasoned with kecap manis (sweet soy sauce), shrimp paste, and chili, topped with a fried egg, crispy shallots, and prawn crackers.

Ingredients
- 600g day-old cooked rice
- 200g chicken breast or prawns, diced
- 3 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp kecap manis (sweet soy sauce)
- 1 tbsp sambal oelek or fresh chili paste
- 1 tsp terasi (shrimp paste), toasted
- 4 eggs
- Crispy fried shallots, krupuk (prawn crackers), sliced cucumber, tomato
Instructions
- Sauté shallots, garlic, and chili paste in oil over very high heat.
- Add chicken or prawns and cook until done.
- Add toasted shrimp paste and stir 30 seconds.
- Add rice and toss vigorously. Pour kecap manis over and stir-fry until rice is well-coated and slightly charred.
- Fry eggs sunny-side up. Serve rice topped with a fried egg, crispy shallots, krupuk, cucumber, and tomato.
