Nasi Goreng (Indonesian Fried Rice)
Indonesia's most famous street food; smoky, sweet-savory fried rice sold at warungs everywhere.

Ingredients
- 3 cups cooked jasmine rice (preferably day-old) 2 tbsp shrimp paste (terasi) 4 shallots, minced 3 cloves garlic, minced 2 red chillies, sliced 3 tbsp sweet soy sauce (kecap manis) 200g chicken breast or shrimp, diced 2 eggs Fried shallots for topping Cucumber and tomato slices for garnish
Instructions
- 1. Heat oil in a large wok. Fry the shrimp paste, shallots, garlic, and chillies until fragrant. 2. Add the chicken or shrimp and cook until no longer pink. 3. Add the rice and break up any clumps. Stir well to coat with the aromatics. 4. Pour in the kecap manis and season with salt and pepper. Stir-fry over high heat until smoky. 5. Push the rice to the side and crack an egg into the center. Scramble and then mix into the rice. 6. Fry another egg sunny-side up separately. 7. Serve the rice topped with the sunny-side up egg and crispy shallots. Garnish with cucumber and tomato.
