- 8 lb pork shoulder
- NC Vinegar Sauce: 2 cups apple cider vinegar, 1 tbsp red pepper flakes, 1 tbsp salt, 1 tsp cayenne
- Hickory wood
Instructions
- Smoke pork at 225°F until internal temp is 200°F (approx 10-12 hours).
- While meat smokes, mix the vinegar and spices; let sit to meld.
- Shred the pork by hand.
- Toss the hot shredded pork with the vinegar sauce until moist and tangy.
