New England Clam Chowder

Ingredients
- 2 cups fresh clams, chopped
- 4 slices salt pork or bacon, diced
- 1 onion, diced
- 2 cups potatoes, peeled and cubed
- 2 cups heavy cream
- 1 cup clam juice
- 2 tbsp butter
- 2 tbsp flour
- 1/2 tsp dried thyme
- Oyster crackers (for serving)
Instructions
- Fry salt pork in a pot until crisp; remove and set aside.
- Sauté onions in the fat until translucent.
- Stir in flour to make a roux, then add clam juice and potatoes.
- Simmer until potatoes are tender.
- Stir in clams and heavy cream; heat through but do not boil.
- Serve hot with the reserved pork bits and oyster crackers.
