Whitebait Fritters
A seasonal delicacy made from tiny, translucent immature fish mixed into a light egg batter and fried.

Ingredients
- 250g fresh whitebait 2 eggs, lightly beaten 1 tbsp flour Salt and pepper Butter for frying Lemon wedges White bread for serving
Instructions
- 1. Gently mix the whitebait with the beaten eggs and flour. Season with salt and pepper. 2. Melt butter in a pan over medium heat. 3. Drop spoonfuls of the mixture into the pan and fry for 1-2 minutes per side until set. 4. Serve immediately between slices of buttered white bread with a squeeze of lemon.
