Nom Banh Chok (Khmer Noodles)
A popular breakfast dish consisting of fresh rice noodles topped with a fish-based green curry gravy and an abundance of fresh herbs and vegetables.

Ingredients
- 500g fresh rice vermicelli
- 1 kg river fish
- 4 cups coconut milk
- 3 tbsp green kroeung paste
- 2 tbsp prahok (fermented fish paste)
- Fresh mint, basil, bean sprouts, banana blossom, and cucumber for garnish.
Instructions
- 1. Boil the fish until cooked, then de-bone and mash the meat. 2. Sauté kroeung paste and prahok in a little oil until fragrant. 3. Add coconut milk and bring to a simmer. 4. Stir in the mashed fish meat and cook for 15 minutes. 5. Place fresh noodles in a bowl. 6. Pour the fish gravy over the noodles. 7. Top with a mountain of fresh herbs, bean sprouts, and sliced banana blossom.
