Omurice (Omelette Rice)
A beloved Yoshoku (Western-style Japanese) dish — ketchup-flavored fried rice with chicken, wrapped in a thin, silky omelette and finished with more ketchup or demi-glace.

Ingredients
- 1 bowl cooked rice
- 50g chicken breast, diced
- 1/4 onion, diced
- 2 tbsp ketchup (plus more for garnish)
- 2 eggs
- 1 tbsp milk, salt, pepper, butter
Instructions
- Stir-fry chicken and onions. Add rice and ketchup. Mix well and set aside in a mound.
- Whisk eggs with milk and salt.
- Heat butter in a non-stick pan. Pour egg mixture and swirl to make a thin, even omelette.
- While the top is still slightly runny, place the rice mound in the center.
- Fold the sides of the omelette over the rice.
- Flip onto a plate and shape with a paper towel. Decorate with a ketchup heart.
