Oyster Omelette (Orh Luak)
A starchy, crispy, and gooey omelette filled with fresh succulent oysters and cilantro.

Ingredients
- 10-12 fresh oysters 2 eggs, lightly beaten 3 tbsp potato starch mixed with 1/2 cup water 2 cloves garlic, minced Fish sauce and white pepper Fresh cilantro Chili vinegar sauce for dipping
Instructions
- 1. Heat oil on a flat griddle or large pan. Pour in the starch slurry. 2. Let it cook until it turns translucent and starts to crisp at the edges. 3. Pour the beaten eggs over the starch. Break it up slightly. 4. Add oysters and garlic. Cook for only 1-2 minutes so the oysters stay juicy. 5. Season with fish sauce and pepper. 6. Garnish with cilantro and serve immediately with the chili vinegar.
