Osh Plov (Uzbek Rice Pilaf)
Uzbekistan's national dish; a majestic layered rice dish cooked with meat, carrots, and a blend of Silk Road spices.

Ingredients
- 1kg devzira or long-grain rice 1kg lamb or beef, cubed 1kg carrots, julienned 3 large onions, sliced 1 head of garlic, whole 1/2 cup vegetable oil or rendered sheep fat 1 tbsp cumin seeds 1 tbsp dried barberries 1 tsp turmeric or saffron threads Salt and black pepper
Instructions
- Rinse rice until water is clear and soak. In a large kazan (cauldon), heat oil until smoking. Brown meat chunks until dark golden. Add onions and sauté until translucent. Layer julienned carrots on top and cook without stirring until soft. Add spices and enough water to cover. Simmer for 30 mins. Spread rice evenly over the top. Add boiling water until it covers rice by 1 inch. Poke holes for steam. Insert the whole garlic head in the center. Cover tightly and cook on low heat until water is absorbed and rice is tender. Mix thoroughly before serving.
