Osh (Tajik Plov)

The king of Tajik cuisine, Osh is a festive rice pilaf cooked with lamb, carrots, onions, and aromatic spices like cumin and barberries.

  1. 1. Heat oil in a kazan and brown the meat. 2. Add onions and fry until golden. 3. Layer carrots over the meat and cook until softened. 4. Pour in water to cover, add cumin, barberries, and whole garlic. Simmer for 30 minutes. 5. Spread rice evenly on top, add more water if needed. 6. Cook on high until water evaporates, then cover and steam on low for 25 minutes.
