Hälsingestinn Ostkaka (Swedish Cheesecake)

A dense, grainy cheesecake with a subtle almond flavor, quite different from the American version.

Ingredients

• milk
• rennet
• flour
• bitter almonds
• eggs
• sugar
• cream

Instructions

1. Curdle the milk with rennet and flour.
2. Drain the curds.
3. Mix curds with eggs, sugar, cream, and grated almonds.
4. Bake until set. Serve lukewarm with jam and whipped cream.
