Pacayas Capeadas
Bitter palm flowers battered in egg and fried, a unique and traditional Salvadoran delicacy.

Ingredients
- 4 pacayas (palm flower spikes) 3 eggs, separated 1/2 cup flour Tomato sauce for serving
Instructions
- Boil the pacayas in salted water to reduce bitterness. Pat dry. Whip egg whites to stiff peaks, then fold in yolks. Dredge pacayas in flour, dip in egg batter, and fry until golden. Serve with a savory tomato sauce.
