Pad Krapao Moo (Holy Basil Pork)

  1. Heat a wok over very high heat until smoking.
  2. Add oil. Fry garlic and chilies 30 seconds until fragrant.
  3. Add ground pork. Stir-fry, breaking up, until cooked through.
  4. Add oyster sauce, fish sauce, soy sauce, and sugar. Toss well.
  5. Add holy basil and toss until just wilted, about 30 seconds.
  6. Serve over jasmine rice. Top with a crispy fried egg.
