Pad Krapao Moo (Holy Basil Pork)
Ground pork stir-fried with holy basil, garlic, and bird eye chilies in a savory oyster-fish sauce glaze — the quintessential Thai street meal.

Ingredients
- 400g ground pork
- 1 cup holy basil leaves (krapao)
- 5 cloves garlic, minced
- 4-6 bird eye chilies, roughly pounded
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp sugar
- 2 tbsp vegetable oil
- 2 eggs (for frying on top)
- Cooked jasmine rice to serve
Instructions
- Heat a wok over very high heat until smoking.
- Add oil. Fry garlic and chilies 30 seconds until fragrant.
- Add ground pork. Stir-fry, breaking up, until cooked through.
- Add oyster sauce, fish sauce, soy sauce, and sugar. Toss well.
- Add holy basil and toss until just wilted, about 30 seconds.
- Serve over jasmine rice. Top with a crispy fried egg.
