Pad Krapow Moo Sab (Basil Pork)
The most popular lunch dish in Thailand — minced pork stir-fried with holy basil, garlic, and chilies, traditionally topped with a crispy fried egg.

Ingredients
- 300g minced pork
- 1 cup holy basil leaves (Krapow)
- 5 cloves garlic, 5 bird's eye chilies (pounded)
- 1 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1/2 tsp dark soy sauce
- 1/2 tsp sugar
- 2 eggs (for frying)
Instructions
- Heat oil in a wok. Fry the garlic and chili paste until fragrant.
- Add minced pork and stir-fry until browned.
- Add oyster sauce, soy sauces, and sugar. Toss well.
- Add holy basil and stir for 30 seconds until wilted. Remove from heat.
- In a separate pan, deep-fry the eggs until the edges are crispy and the yolk is runny.
- Serve the pork over rice with the fried egg on top.
