Pad Krapow Moo Sab (Basil Pork)

The most popular lunch dish in Thailand — minced pork stir-fried with holy basil, garlic, and chilies, traditionally topped with a crispy fried egg.

  1. Heat oil in a wok. Fry the garlic and chili paste until fragrant.
  2. Add minced pork and stir-fry until browned.
  3. Add oyster sauce, soy sauces, and sugar. Toss well.
  4. Add holy basil and stir for 30 seconds until wilted. Remove from heat.
  5. In a separate pan, deep-fry the eggs until the edges are crispy and the yolk is runny.
  6. Serve the pork over rice with the fried egg on top.
