Pad See Ew (Stir-Fried Soy Sauce Noodles)
A popular Thai street food dish of broad rice noodles stir-fried with Chinese broccoli, egg, and a savory-sweet dark soy sauce.

Ingredients
- 300g wide flat rice noodles (Sen Yai)
- 200g sliced pork or chicken
- 2 cups Chinese broccoli (Gai Lan), sliced
- 2 eggs
- 2 cloves garlic, minced
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- White pepper
Instructions
- Mix soy sauces, oyster sauce, and sugar in a small bowl.
- Heat oil in a wok over high heat. Sauté garlic and meat until cooked.
- Push meat to the side and scramble eggs until set.
- Add noodles and the sauce mixture. Toss vigorously until noodles are coated and slightly charred.
- Add Chinese broccoli and toss until wilted but still crisp.
- Season with white pepper and serve immediately.
