Palachinki (Slavic Crepes)

Thin, delicate Slavic-style crepes, similar to French crêpes but often heartier. A staple of Central and Eastern European households, they are traditionally filled with jam, honey, or walnut-sugar spread.

  1. Whisk eggs and sugar. Gradually add flour and milk (and sparkling water), whisking until a smooth, thin batter forms.
  2. Stir in melted butter and salt. Let the batter rest for 20 minutes.
  3. Heat a lightly greased non-stick pan over medium heat.
  4. Ladle a small amount of batter into the pan, swirling it to coat the bottom thinly.
  5. Cook for 1-2 minutes until the edges are golden, then flip and cook for another minute.
  6. Stack the crepes on a plate. Spread your chosen filling over each crepe, then roll or fold into triangles.
  7. Serve warm, dusted with powdered sugar.
