Pampushky (Garlic Bread Rolls)
Soft, fluffy yeast rolls traditionally served with Ukrainian borscht, generously brushed with a potent garlic and herb oil.

Ingredients
- 400g all-purpose flour
- 250ml warm water
- 7g instant yeast
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp vegetable oil
- For the garlic topping:
- 3 cloves garlic, crushed
- 3 tbsp sunflower oil
- 2 tbsp chopped fresh parsley or dill
- 1 tbsp water
- Pinch of salt
Instructions
- Mix warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- In a large bowl, combine flour and salt. Add the yeast mixture and oil. Knead for 8-10 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
- Punch down the dough and divide into 12 equal balls. Arrange them in a greased circular baking tin, slightly touching each other.
- Cover and let rise for another 30 minutes.
- Preheat oven to 190°C (375°F). Bake for 20-25 minutes until golden brown.
- While baking, mix crushed garlic, oil, water, salt, and herbs.
- Brush the hot rolls with the garlic mixture immediately after taking them out of the oven.
