Pan Dulce (Conchas)
Mexican sweet bread with a sugar-crust topping — soft, enriched dough topped with a vanilla or chocolate sugar paste, the most iconic Mexican pastry.

Ingredients
- For dough: 500g flour, 100g sugar, 100g butter, 2 eggs, 7g yeast, 150ml warm milk, 1 tsp vanilla, 1 tsp salt
- For sugar crust (costra): 150g powdered sugar, 100g butter, 100g flour, 1 tsp vanilla (plain) or 2 tsp cocoa (chocolate)
Instructions
- Make dough: dissolve yeast in warm milk. Mix with flour, sugar, butter, eggs, and vanilla. Knead 10 minutes. Rise 1.5 hours.
- Make costra: mix powdered sugar, butter, and flour (and cocoa if chocolate). Divide into small balls.
- Divide dough into 12 balls.
- Flatten a costra ball into a disc. Place on top of dough ball. Score in shell pattern with a knife.
- Rise 30 minutes.
- Bake at 180C for 18-20 minutes.
