Pan Dulce (Conchas)

Mexican sweet bread with a sugar-crust topping — soft, enriched dough topped with a vanilla or chocolate sugar paste, the most iconic Mexican pastry.

Instructions

  1. Make dough: dissolve yeast in warm milk. Mix with flour, sugar, butter, eggs, and vanilla. Knead 10 minutes. Rise 1.5 hours.
  2. Make costra: mix powdered sugar, butter, and flour (and cocoa if chocolate). Divide into small balls.
  3. Divide dough into 12 balls.
  4. Flatten a costra ball into a disc. Place on top of dough ball. Score in shell pattern with a knife.
  5. Rise 30 minutes.
  6. Bake at 180C for 18-20 minutes.
