Panang Curry (Gaeng Panang)
A thick, salty-sweet Thai curry with a nutty flavor, made with ground peanuts and flavored with shredded kaffir lime leaves.

Ingredients
- 500g beef or chicken, sliced
- 400ml coconut milk (divided)
- 3 tbsp Panang curry paste
- 2 tbsp roasted peanuts, finely ground
- 5 kaffir lime leaves, very finely shredded
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 2 red chilies, sliced
Instructions
- Heat 1 cup of coconut milk in a pan until it separates and releases oil.
- Add Panang curry paste and stir-fry for 2 minutes.
- Add meat and stir until mostly cooked.
- Add the rest of the coconut milk, ground peanuts, fish sauce, and sugar.
- Simmer until the sauce thickens and the meat is tender.
- Stir in half the shredded lime leaves.
- Serve topped with sliced chilies and the remaining lime leaves.
