Pannukakku (Finnish Oven Pancake)
A custardy oven-baked pancake that puffs up in the oven and is traditionally served as a weekend breakfast or dessert.

Ingredients
- 3 eggs 2 cups milk 1 cup all-purpose flour 2 tbsp sugar 1/2 tsp salt 4 tbsp butter 1 tsp vanilla extract (optional) Jam and whipped cream for serving
Instructions
- Preheat oven to 400°F (200°C). Place butter in a 9x13 inch baking pan and put it in the oven to melt. In a large bowl, whisk the eggs until frothy. Whisk in the milk, sugar, salt, and vanilla. Gradually whisk in the flour until smooth (some small lumps are okay). Remove the hot pan from the oven and swirl the melted butter to coat the bottom and sides. Pour the batter into the hot pan over the butter. Bake for 25-30 minutes until the pancake is puffed up and golden brown on top. The pancake will deflate as it cools. Serve warm with strawberry jam, fresh berries, or whipped cream.
