Pão de Queijo

Iconic Brazilian cheese bread made with cassava flour (tapioca starch), resulting in a crispy exterior and a chewy, airy center.

  1. Preheat oven to 190°C (375°F).
  2. In a saucepan, bring milk, oil, and salt to a boil.
  3. Place cassava flour in a large bowl and pour the hot liquid over it. Mix with a wooden spoon until a dough forms and let it cool slightly.
  4. Add eggs one at a time, mixing well (it will be sticky).
  5. Add the grated cheese and knead until the dough is smooth and uniform.
  6. With greased hands, roll the dough into small balls (about 3cm) and place on a baking sheet.
  7. Bake for 20-25 minutes until golden and puffed.
