Pão de Queijo
Iconic Brazilian cheese bread made with cassava flour (tapioca starch), resulting in a crispy exterior and a chewy, airy center.

Ingredients
- 500g sweet cassava flour (polvilho doce)
- 250ml milk
- 100ml vegetable oil
- 1 tsp salt
- 2 large eggs
- 200g Minas cheese or Parmesan, grated
Instructions
- Preheat oven to 190°C (375°F).
- In a saucepan, bring milk, oil, and salt to a boil.
- Place cassava flour in a large bowl and pour the hot liquid over it. Mix with a wooden spoon until a dough forms and let it cool slightly.
- Add eggs one at a time, mixing well (it will be sticky).
- Add the grated cheese and knead until the dough is smooth and uniform.
- With greased hands, roll the dough into small balls (about 3cm) and place on a baking sheet.
- Bake for 20-25 minutes until golden and puffed.
